Better Broccoli Salad | Original Broccoli Salad | Don's Spicy Orange Chicken
The Dressing
- 1 cup real mayonnaise
- 1/3 cup granulated sugar
- 2 Tbsp. red wine vinegar
The Salad
- 2-3 small bunches fresh broccoli - cut in bite-size pieces
- 1/2 cup red onion, chopped
The Topping
- 8-10 slices cooked bacon, crumbled
- 2/3 cup craisins
- 2 cups shredded cheddar cheese
- 1 cup sunflower seed, shelled
- Toss salad ingredients in a large bowl; set aside.
- In a separate bowl, beat together dressing ingredients.
- Pour dressing over salad and toss to coat.
- Refrigerate at least 2 hours before serving, tossing occasionally.
- Toss in topping ingredients before serving.

The Salad

The Sauce
- Sunbird Spicy Orange Beef mix
- 1/3 cup water
- 1/3 cup granulated sugar
- 2 Tbps soy sauce (low sodium soy sauce works well)
- You may also add a dash of orange extract or orange juice for flavor,
but don't go overboard with it.
The Rest
- 1 medium Onion cut in wedges
- 1 small red bell pepper cut in chunks
- 2-3 boneless skinless chicken breasts
- Blend seasoning, sugar, soy sauce and water. Set mix aside.
- Heat a dash of oil in wok or deep skillet.
- Add bell pepper and onion and stir fry until tender. Set vegetables
aside.
- Allow wok to heat again with another dash of oil.
- Add chicken and stir fry until fully cooked. If your wok is not very
large, you may have to cook the chicken in 2 or 3 batches.
- Add peppers and onions to the chicken.
- Gently stir in sauce until chicken and vegetables are thoroughly covered
and until sauce becomes thick.
- Serve over steamed rice.
NOTE: The recipe on the back of the Sunbird Spicy Orange Beef mix is
also good but calls for beef (obviously) and pre-coating the beef with corn
starch. You can also use the corn starch method with the chicken if you like
a little crunchiness. All three ways are actually very good.
